There was a fast food chain back in the late 60's, early 70's called Kentucky Beef that was similar to Arby's nowadays, but I think it was a subsidiary of KFC. No one that I know seems to recall this chain. It only lasted 1 or 2 years in this area of the country. What happened to it?

No, you're not going insane... they really DID exist! At least 2 or 3 that I know of. I have submitted a picture which should hopefully be displayed soon. The business basically failed, and KFC went back to focusing 100% on what it use to do best: Fried Chicken.

I remember one of these being in Wilton CT back in the late 60s early 70s. My friends' sister worked there.

Hey, I remember Kentucky Beef. There was one in El Cajon, CA (a suburb of San Diego, basically) back in '68-'69. I ***loved*** their sandwiches. MUCH better than Arby's. Sad that they failed.
