Description
Thin chocolate, crispy wafers, packaged in a rectangular row. Hard to find at the store now and when available, ridiculously expensive.

The ice box cookies, chocolate in flavor, were originally square in shape and rather thin. You laid them out 5 rows x 5 rows and smothered them in whipped cream, then repeated that until you had a "cake" about 1 1/2" high, put it in the fridge until it hardened. The cookies actually absorbed moisture from the whipped cream and softened. Delicious. Then somebody decided to make the cookies round and that screwed up the cake building. They may still be available, but Cool Whip is probably used as a filler. Frank L. (Boston)
